I love creating dishes using different kinds of tomatoes. They’re just so versatile in that they can be cooked and enjoyed in so many ways!   • Extra Virgin Olive Oil: Lends a delicate flavor to our tomatoes.
    • I love to use high-quality extra virgin olive oil for the taste factor, but avocado oil makes another great choice.
  • Cherry tomatoes: The star of this dish! I recommend using the freshest, ripest tomatoes on the vine as they taste amazingly sweet. It’s also best to use them whole instead of cutting into them as part of what makes this dish so good is the experience of biting into each individual tomato.
    • Grape tomatoes can also be used as a substitute if you don’t have cherry tomatoes, though they are often not as sweet.   
  • Garlic Cloves: Lend a distinctive flavor and aroma to our blistered tomatoes that make them more delicious.
    • You can also use shallots to give this dish added flavor and sweetness. 
  • Ground Pepper and Salt: The seasonings that help make other ingredients taste even better. 
  • Fresh Basil Leaves: Acts as a garnish that also gives a fresh, herby taste to our dish.
    • Substitutions of other herbs like thyme, oregano, rosemary, or tarragon also work as they also lend an excellent flavor to cherry tomatoes. You can also use a blend of herbs if you prefer.

How to Make Blistered Tomatoes

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the tomatoes and let them cook undisturbed for 3 minutes.
  3. Stir the tomatoes while cooking for 2 minutes longer.
  4. Add the garlic, pepper and salt. Stir well and cook for 1 minute longer.
  5. Turn off the heat, then add the torn basil.
  6. Serve and enjoy!
