Brown sugar glazed carrots are a timeless side dish that brings sweetness to any meal! How to Make Brown Sugar Baked Carrots

Preheat the oven to 400°F. Arrange the carrots in a single layer on a baking sheet. In a small bowl, stir together the melted butter, brown sugar, cumin, and salt until combined.

Pour the brown sugar glaze over the carrots and toss until evenly coated.

Roast for 25–30 minutes, stirring halfway through, until the carrots are tender and caramelized.

Kristen’s Top Tips

  • If you don’t have baby carrots on hand, you can use young or larger carrots as a substitute. Just peel and then cut the whole carrots into uniform pieces to ensure even cooking.
  • If you want a milder taste, use light brown sugar or coconut sugar. But if you’re after a more caramelized flavor, use dark brown sugar.
  • Avoid overcooking the carrots so they won’t end up mushy. The best carrots are the ones with a little bite!

Ingredients

  • 1 pound baby carrots peeled
  • 2 tablespoons butter or vegan butter, melted
  • 2 tablespoons brown sugar
  • ½ teaspoon ground coriander
  • pinch salt
  • fresh dill chopped, for garnish

Method

  1. Preheat the oven to 400°F.
  2. Place the carrots in a single layer on a baking sheet.
  3. In a small bowl, combine the melted butter, brown sugar, coriander, and salt. Mix well.
  4. Pour the brown sugar glaze over the carrots, then toss to coat well.
  5. Roast for 25–30 minutes, stirring once halfway through, until caramelized.
  6. Garnish with fresh dill. Serve and enjoy!

Notes

Storage and Reheating 
Place the leftovers in an airtight container, then store them in the fridge for up to 3 days. Personally, I don’t recommend freezing them since the carrots will likely end up soft and mushy after thawing. 
You can reheat these brown sugar baked carrots in the pan, air fryer, or oven. If they look dry, add a small amount of butter, vegan butter, or water while reheating. 
For quick reheating, warm smaller portions in the microwave in short intervals.
