Hana Mendes of Nirvana Cakery
Hana creates beautiful, unique, and healthy plant-based meals and desserts that I find wholly inspiring! I’ve been following Hana on Instagram for some time; and I knew when I decided to start an interview series with my favorite food blogging inspirations that Hana just had to be first. Hana’s creations are full of magical flavor and ingredient combinations that are also healthy, approachable and positively GORGEOUS. Where do you find inspiration?
Most of the time ideas just come to me, other times it could be a mixture of seeing beautiful photo, recipe, ingredient, colours that I translate into a recipe.
For you, what is a typical:
Breakfast – Quinoa flakes porridge topped with seasonal fruit and seeds
Lunch – Lentil burgers, black rice, steamed greens with fresh seasonal salad
Dinner – Large bowl of veggie soup
Snack – Seasonal fruit, nuts and seeds, dark chocolate
Dessert – usually a recipe I’m working on or fresh fruit, a medjool date with tahini or dark chocolate
What is one beverage that you never tire of?
Green tea or Roibosh tea with a dash of almond milk
What’s one tried & true recipe from your blog that you make rather frequently?
I have to say I have quite few, my Rosemary Buckwheat Crackers, Best Vegan Borscht, Vegan Apple Cake and Cherry Chocolate Tart. These are the ones that I make all the time, especially the two desserts, because everyone loves them.
What’s one kitchen gadget, tool, or appliance that you could not live without and would recommend to readers?
Good high speed blender, I use it all the time.
What is your favorite meal to eat out? Any particular restaurant?
I have to say I very rarely eat out, I prefer to make my own food.
What are your photographic tools of the trade? Favorite food props?
A good DSLR camera, natural lighting & intriguing dish. After 3 years of blogging I have finally treated myself to a marble board which I absolutely love. I keep my props to minimum, I love my vintage glass cake stand, my great grandmother’s lace doilies and fresh flowers.
What is one of your favorite places in the world & how has it influenced you and your food blog?
It’s my garden back home at my parent’s house where I’ve grown up. My grandparents used to spend every single day in that garden and I’ve been helping them throughout my childhood growing fruit, vegetables and flowers. My grandfather used to sell fruit trees and strawberry plants and organise flower exhibitions and my grandma used to grow so many flowers. These childhood years strongly shaped who I am and installed in me my deep connection to nature, plants & flowers.
What is your favorite spice & something you’ve created with it?
Cardamom and I use it in so many recipes! My favourite is my Raw Fig Walnut Cardamom Tarts & if you love cardamom you must try these.
Who do you most like to cook for?
My family, friends & anyone who appreciates a healthy plant-based meal, especially a great wholesome dessert.

If that’s what your heart tells you to do, start today, because you’re meant to share your gift with others. It’s a wonderful journey.
