Hearty Banana-Oat Breakfast Loaf (Gluten-Free)
Ingredients
- 1 cup all purpose gluten free flour
- 1/2 cup brown rice flour
- 1 cup rolled oats
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup coconut sugar
- 3 bananas mashed
- 1 tsp vanilla extract
- 2 tbs almond butter
- 1 egg beaten
- 1/2 cup plain Greek yogurt
- 2 tbs raw honey
- 1 tbs coconut oil melted
Instructions
- Preheat oven to 350°F.
- In a large mixing bowl, combine dry ingredients.
- In another mixing bowl, combine wet ingredients.
- Mix your wet & dry ingredients together until just combined.
- Pour batter into a greased or parchment-lined loaf pan.
- Bake 1 hour - 1 hour, 15 minutes, or until turning golden & a toothpick inserted in the center comes out clean.
- Let cool completely before slicing.
- Enjoy!
