I will always and forever love this recipe. It is light, refreshing, packed with beautiful flavors and simply nice to have on hand to put on the dinner table as an unexpected and beautiful addition to mealtime. Few things are better than fresh summer salads!

  1. We had a large English cucumber, an extra large red onion, and a gigantic green bell pepper. The recipe provided specific quantities of other items but not these three. I don’t know if we have the right mix; can you please provide how much cucumber, red onion, and bell pepper?

The size of the cucumber, bell pepper, and onion are not super important in this particular recipe (I make it with varying sizes of produce with good results each time), but if it helps, it should approximately be: 1 1/4 cup diced cucumber, 1 cup chopped bell pepper, and 1/3 cup chopped red onion.I hope you enjoy the recipe! 🙂
