Ingredients

Cucumber Salad
  • 1 cucumber diced, peel on
  • 1 bell pepper chopped
  • 1/2 cup chickpeas from a can or freshly cooked
  • 1/4 cup parsley chopped
  • 1/4 cup olives of choice chopped
  • 1/4 red onion diced
Dressing
  • 5 tablespoons olive oil
  • 5 tablespoons lemon juice
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon sea salt or pink salt
  • 1/8 teaspoon dried dill weed
  • 1/8 teaspoon ground black pepper
Optional
  • 1/3 cup feta cheese crumbled

Method

Salad
  1. In a large bowl combine all salad ingredients (cucumber through red onion).
Dressing
  1. In a small bowl combine all dressing ingredients.
Combine and Serve
  1. Drizzle the dressing over the salad and toss to combine. Optionally, top with some crumble feta cheese (omit for vegan version).
  2. Serve and enjoy!

  1. We had a large English cucumber, an extra large red onion, and a gigantic green bell pepper. The recipe provided specific quantities of other items but not these three. I don’t know if we have the right mix; can you please provide how much cucumber, red onion, and bell pepper?

The size of the cucumber, bell pepper, and onion are not super important in this particular recipe (I make it with varying sizes of produce with good results each time), but if it helps, it should approximately be: 1 1/4 cup diced cucumber, 1 cup chopped bell pepper, and 1/3 cup chopped red onion.I hope you enjoy the recipe! 🙂
