We had a large English cucumber, an extra large red onion, and a gigantic green bell pepper. The recipe provided specific quantities of other items but not these three. I don’t know if we have the right mix; can you please provide how much cucumber, red onion, and bell pepper?
Hi, Rebecca! Thank you for visiting. The size of the cucumber, bell pepper, and onion are not super important in this particular recipe (I make it with varying sizes of produce with good results each time), but if it helps, it should approximately be: 1 1/4 cup diced cucumber, 1 cup chopped bell pepper, and 1/3 cup chopped red onion.I hope you enjoy the recipe! 🙂
