I’m heading back to my Southern roots with this healthy air fryer spin on Hush Puppies! They are super tasty and easy to make!
Combine polenta, GF flour, and remaining dry ingredients.
Finely dice 1/2 an onion.
Fold onion into dry mix.
Add coconut milk (or buttermilk) and remaining wet ingredients.
Fold in chopped vegan or regular butter.
Your batter should look like so.
Roll batter into rounds then place in greased air fryer basket/tray.
Air fry at 390F for 15 minutes.
Let cool, then enjoy!
