Cilantro Pesto

Ingredients

  • 2 cups cilantro stems trimmed
  • 1/2 cup sunflower seeds
  • 1/3 cup parmesan cheese shredded
  • 3 garlic cloves
  • 1/2 cup extra virgin olive oil
  • 3 tbs apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp red chili flakes

Instructions

  • Combine all ingredients in a food processor or blender & mix until smooth.
  • Store in an airtight glass container in the fridge for up to 2 weeks.

Notes

Salted or unsalted sunflower seeds can be used. Just be certain to adjust the added salt accordingly (by taste).
