Preheat air fryer to 390°F. Grease air fryer basket/tray and set aside.
In a large mixing bowl add polenta, flour, starch, salt, baking powder, psyllium husk powder, baking soda, cayenne. Mix well. Fold in diced onion.
To the dry mixture add coconut milk, vinegar and maple syrup. Mix all together well. Gently fold in the chopped butter.
Use a tablespoon and scoop out rounded mounds of batter from the bowl (approximately golf ball-sized).
Using wet hands roll the batter into a smooth ball of dough. Place each dough ball into your greased air fryer basket/tray, ensuring none are touching each other.
Air fry at 390°F for 12-15 minutes, or until all hush puppies are turning crisp and golden.
