Ingredients

  • 1 cup dry uncooked polenta or coarsely ground cornmeal
  • 1 cup gluten-free all purpose flour or regular flour if not gluten-free
  • 2 tablespoons tapioca starch or corn, potato or arrowroot starch
  • 1 ½ teaspoons sea salt or pink salt
  • 1 teaspoon baking powder
  • 1 teaspoon psyllium husk powder or 1 egg if not vegan or dairy-free
  • ¼ teaspoon baking soda
  • teaspoon ground cayenne
  • 1/2 medium white or yellow onion finely diced
  • 1 13.5-ounce can full fat coconut milk or buttermilk if not vegan or dairy-free
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon maple syrup or raw honey if not vegan
  • 4 tablespoons plant-based butter, chopped or regular butter if not dairy-free or vegan

Instructions

  • Preheat air fryer to 390°F. Grease air fryer basket/tray and set aside.
  • In a large mixing bowl add polenta, flour, starch, salt, baking powder, psyllium husk powder, baking soda, cayenne. Mix well. Fold in diced onion.
  • To the dry mixture add coconut milk, vinegar and maple syrup. Mix all together well. Gently fold in the chopped butter.
  • Use a tablespoon and scoop out rounded mounds of batter from the bowl (approximately golf ball-sized).
  • Using wet hands roll the batter into a smooth ball of dough. Place each dough ball into your greased air fryer basket/tray, ensuring none are touching each other.
  • Air fry at 390°F for 12-15 minutes, or until all hush puppies are turning crisp and golden.
  • Let cool for a few minutes before serving. Enjoy!
