gluten-free all purpose flour blend
with or without xanthan gum

cup
tapioca flour
¼
cup

baking soda

sea salt

maple syrup
or other liquid sweetener of choice

cup
melted coconut oil

flax egg
1 tablespoon ground flax seed mixed with 3 tablespoons of warm water

teaspoon
vanilla extract

coconut chips
unsweetened
flaked sea salt

Instructions
Preheat the oven to 350°F. Grease or line an 8 x 8 pan with parchment paper, then set aside.
In a large mixing bowl, combine the flours,

, baking soda and sea salt. Mix well.
Add the maple syrup, oil, flax egg and vanilla extract. Mix until a smooth dough forms. Gently fold in the coconut chips.
Press the dough into the prepared baking pan in one even layer. Optionally, sprinkle with a little flaked sea salt before baking.
Bake for 15 minutes or until firm and the edges are turning golden.
Allow the blondies to cool in the pan for at least ten minutes before removing and slicing. They will continue to firm up as they cool.
Slice into bars and enjoy!
