Easy one pot stewed potatoes make a delicious side dish that can be served alongside a large variety of main courses or enjoyed just as is for a bit of comfort food!
In large pot over high heat, add the potato chunks. Add cold water until the potatoes are just covered.
Add the butter, salt, garlic powder, and pepper.
Bring the potatoes to a boil, then reduce to a simmer and cover the pot with a lid.
Allow the potatoes to simmer, stirring occasionally, for 35-45 minutes, or until most of the water has evaporated, the potatoes are fork tender and have started to break apart and are slightly creamy in texture.
