Step 1
Slice and chop cabbage.
Step 2
Add salt, then massage the cabbage with your hands.

Add spices, then continue to massage until the cabbage has softened and quite a bit of liquid (brine) has been released.

Pack the cabbage and the brine into a clean glass jar. Pack down, cover and let ferment.
