These pumpkin spice air fryer baked apples are tender, warmly spiced, and topped with crunchy granola and vanilla ice cream. An easy fall apple dessert made in the air fryer in about 20 minutes!
Cut the apples in half vertically, from stem to bottom. Remove the stems, then scoop out the cores with a spoon or melon baller. Place the halves cut-side up in the air fryer basket.
Brush with the melted butter, then sprinkle with the sugar and pumpkin spice.
Air fry at 350°F for 15 to 20 minutes, or until the apples are tender and a fork easily pierces the flesh. Larger apples may need a few extra minutes.
Spoon granola over the hot apples.
Add a scoop of vanilla ice cream, serve, and enjoy!

Notes
Use large, firm apples such as Honeycrisp, Granny Smith, Gala, Cosmic Crisp, or Braeburn. These varieties soften nicely while still holding their shape.Store-bought or homemade granola both work well. Add it only after the apples have finished cooking so it stays crisp. The size and variety of your apples can affect the cooking time. Larger, firmer apples may need a few extra minutes. To make it vegan/dairy-free, use vegan butter and serve with your favorite dairy-free vanilla ice cream. The apples are ready when a fork slides easily into the flesh but the halves are still holding their shape.Air fryer models vary, so start checking for doneness around the 15-minute mark.
