These air fryer sweet plantains (maduros) are made with ripe yellow plantains, oil, and salt, then cooked until soft, golden, and lightly caramelized. A simple Caribbean-inspired side dish that pairs well with rice, beans, and savory bowls.
Peel the plantains and slice them on a slight diagonal into ½-inch thick pieces.
Add the plantain slices to a bowl and toss gently with the oil and salt until evenly coated.
Arrange the slices in a single layer in the air fryer basket, leaving a little space between each piece.
Air fry at 380°F for 6 minutes.
Flip the plantains, then return them to the air fryer for another 6 minutes, until deeply golden and caramelized on the edges.
Remove and serve warm with an optional sprinkle of flaked salt. Enjoy!

Storage and Reheating Let the air fryer plantains cool completely before storing them in an airtight container to prevent condensation. Keep in the fridge for up to 3 days for the best texture and flavor. Personally, I don’t recommend freezing cooked maduros since the texture deteriorates over time.You can reheat the plantains in the air fryer, oven/oven toaster, or skillet. Don’t use the microwave, as they may end up soggy instead of crisp.
