Add the oil, onion, garlic, ginger, cumin, coriander, turmeric, garam masala, paprika, cayenne (if using), diced tomatoes, coconut milk, vegetable broth, mixed vegetables, and salt directly to the slow cooker. Stir to combine.
Cover and cook on low for 6–7 hours, or on high for 3–4 hours, until the vegetables are tender and the curry is creamy and aromatic.
Stir in the lime juice, taste, and adjust salt if needed.

Storage and Reheating Let the vegetable curry cool completely before storing the leftovers in an airtight container and keeping them in the refrigerator for up to 5 days. You can also freeze smaller curry portions in freezer-safe bags or containers for 2-3 months. Gently reheat portions on the stove or in the microwave, stirring occasionally to prevent sticking. If needed, add water or broth to help loosen the sauce, then a squeeze of lime juice to revive the flavors.
