Sweet Potato Curry with Chickpeas  and Pumpkin

coconut oil onion garlic curry powder cumin seeds ginger cinnamon black pepper coconut milk pumpkin puree chickpeas sweet potatoes coconut sugar water lemon juice cilantro salt 


Press the saute button on your electric pressure cooker. Add oil, onion and garlic. Saute for 3 minutes, stirring frequently. Add spices, curry powder through black pepper. Stir and saute

Add coconut milk and pumpkin.

Add sugar, chickpeas, and sweet potato. Stir well.

Add water. Stir well.

Cook on manual high pressure for 8 minutes. 

Turn off heat, stir in lemon and cilantro. Salt to taste. Serve and enjoy!
