Place the carrots in a single layer on a baking sheet.
In a small bowl, combine the melted butter, brown sugar, coriander, and salt. Mix well.
Pour the brown sugar glaze over the carrots, then toss to coat well.
Roast for 25–30 minutes, stirring once halfway through, until caramelized.
Garnish with fresh dill. Serve and enjoy!

Storage and Reheating Place the leftovers in an airtight container, then store them in the fridge for up to 3 days. Personally, I don’t recommend freezing them since the carrots will likely end up soft and mushy after thawing. You can reheat these brown sugar baked carrots in the pan, air fryer, or oven. If they look dry, add a small amount of butter, vegan butter, or water while reheating. For quick reheating, warm smaller portions in the microwave in short intervals.
