Every bite of these delicious foil packet potatoes will surely delight everyone at the dinner (or camping) table! The adobo seasoning in this recipe will give you potatoes practically bursting with yummy herby flavors.
Layer two sheets of foil around 12 x 9-inches or so.
Slice the potato into thin slices around ⅛-¼-inch thick, using a sharp knife or a mandoline.
Place the potatoes on the foil, then drizzle with the oil and sprinkle with adobo seasoning. Toss to coat.
Take two more sheets of layered foil and place it on top of the potatoes, crinkling the edges around the bottom layer of foil until all is secure and no oil leaks out.
Place on a grill heated to around 450-650℉, or medium heat.
Cook for 15 minutes, flip the packet over, and grill for 15 minutes longer or until the edges of the potatoes are crispy and all is fork-tender.

Notes
I've created this recipe as one serving as it is super simple to increase the servings as needed. Remember: 1 potato = 1 foil packet = 1 serving. You simply repeat the process for each serving you need to make.
Due to the difference in adobo seasoning mixtures, I recommend waiting to see if you need to add salt at the end of cooking. Some adobo seasoning blends are salty enough that no additional salt is needed.
I love to keep the skins on in this recipe, as they get deliciously crispy, but feel free to peel your potatoes if you prefer.
