I love using my own homemade spice blends, particularly this adobo seasoning, to flavor various recipes. The combination of spices like garlic, onions, black pepper, and oregano makes the potatoes super savory and delicious, and grilling them elevates the flavors even more. So, if you’re looking for a potato-based appetizer or side dish to make, then you have to give these adobo potatoes a try. It also makes an excellent grilled side dish addition to a camping meal. Enjoy!

Ingredient Notes

  • Russet potatoes – These are the best potatoes to use for grilling since they absorb flavors beautifully.
  • Oil – I like to use avocado oil in this recipe, but go ahead and use olive oil or whatever oil you have or prefer.
  • Salt – Enhances the flavors of the ingredients.
    • You can skip adding salt to this dish depending on how salty your adobo seasoning is.

Expert Tips

  • I’ve created this recipe as one serving; increasing the servings as needed is super simple. Remember: 1 potato = 1 foil pack = 1 serving. Repeat the process for each serving you need to make.
  • I recommend waiting to see if you need to add salt at the end of cooking. Some adobo seasoning blends are salty enough that no additional salt is needed.
  • I love to keep the skins on in this recipe, as they get deliciously crispy but feel free to peel your potatoes if you prefer.
  • Slice the potatoes in similar sizes so they’ll cook evenly.
  • Placing potatoes in a single layer on the grill is a great way to ensure they’ll be equally crispy.
  • Let the foil packet with potatoes cool on a wire rack for a few minutes before serving. This allows the steam to escape, preventing the potatoes from becoming too soggy, and ensuring they retain their texture.

Serving Ideas

  • Sprinkled with fresh herbs like rosemary and thyme to ramp up the flavors.
  • Topped with a savory and warm vegetarian chili.
