Ingredients

large bunch
fresh cilantro
leaves and stems
1
large fresh mild green chile
I like to use Anaheim chile
3
garlic cloves
1
teaspoon
cumin seeds
2
tablespoons
white wine vinegar
1/4
cup
extra-virgin olive oil
salt to taste
water
as needed, for consistency, I use around 1/4 cup

Instructions
Wash and roughly chop the cilantro.
In a blender or food processor, combine the cilantro, green chile, garlic, and cumin seeds.
Pour in the vinegar, olive oil, and a pinch of salt.
Blend until smooth, adding water as needed to create a smooth, slightly runny sauce.
Taste and adjust the salt if needed.
