Olive Oil Garlic Cloves Onion Bell Pepper Green Beans Carrots Red Lentils Fire-Roasted Tomatoes Potato Vegetable Broth Bay Leaf Coconut Sugar Italian Seasoning Garlic Powder Fennel Seeds Thyme Black Pepper Pasta of choice Greens  Sea Salt Optional Garnishes: Parmesan Cheese 

INSTRUCTIONS

In a large pot over medium heat add oil, garlic, onion and bell pepper.  Saute while stirring occasionally for 3-4 minutes or until onion is turning translucent.

- Stir in green beans and carrots. - Stir in lentils, tomatoes, potato, broth and all spices. Simmer for 15 minutes.

– Stir in mixed greens. Turn off heat, salt to taste. Cover and let sit for 5 minutes to allow the greens to wilt. - Optionally garnish with nutritional yeast or parmesan cheese before serving.
