  • Toasted Sesame Oil

Ingredients

Spicy Peanut Sauce

  • 3/8 cup salted peanuts
  • 2 tbs toasted sesame oil
  • 2 garlic cloves
  • 1/4 tsp ginger ground
  • 1 serrano pepper
  • 1 medjool date pitted
  • 1/3 cup water
  • 1 tbs apple cider vinegar

Brown Rice Pasta w/ Veggie Confetti

  • 12 oz brown rice pasta
  • 1/2 red onion finely chopped
  • 2 mini sweet bell peppers finely chopped
  • 1 garlic clove minced
  • 1 cup peas steamed
  • sesame seeds & dried cilantro for garnishing

Instructions

Spicy Peanut Sauce

  • In a food processor, blend peanuts & sesame oil until smooth.
  • Add remaining ingredients & process until evenly mixed.
  • Use right away or store in an airtight glass container in the fridge for up to 2 weeks.

Brown Rice Pasta w/ Veggie Confetti

  • Cook brown rice noodles until al dente. Drain & set aside.
  • Steam peas, set aside.
  • In a sauce pan over medium heat saute onion, garlic & peppers in a dash of sesame oil until all begins to brown.

To Serve

  • Fill bowl(s) with pasta, sprinkle with veggie confetti, drizzle with
  • peanut sauce, garnish with sesame seeds & cilantro! Serve warm or cold.
  • Enjoy!
