Gluten-Free Vegan Peanut Noodles Veggie Bowl
Ingredients
- 3/8 cup salted peanuts
- 2 tbs toasted sesame oil
- 2 garlic cloves
- 1/4 tsp ginger ground
- 1 serrano pepper
- 1 medjool date pitted
- 1/3 cup water
- 1 tbs apple cider vinegar
- 12 oz brown rice pasta
- 1/2 red onion finely chopped
- 2 mini sweet bell peppers finely chopped
- 1 garlic clove minced
- 1 cup peas steamed
- sesame seeds & dried cilantro for garnishing
Method
- In a food processor, blend peanuts & sesame oil until smooth.
- Add remaining ingredients & process until evenly mixed.
- Use right away or store in an airtight glass container in the fridge for up to 2 weeks.
- Cook brown rice noodles until al dente. Drain & set aside.
- Steam peas, set aside.
- In a sauce pan over medium heat saute onion, garlic & peppers in a dash of sesame oil until all begins to brown.
- Fill bowl(s) with pasta, sprinkle with veggie confetti, drizzle with
- peanut sauce, garnish with sesame seeds & cilantro! Serve warm or cold.
- Enjoy!
