This hearty, filling, healthy and delicious Spicy Veggie Confetti Pasta Bowl topped with Peanut Sauce makes for one beautiful and vibrant Gluten-Free & Vegan lunch or dinner!
This is what I would consider to be a comfort food dish. I threw it together in the midst of a craving for a peanut sauce, and it certainly did quench my desires!
Creamy, spicy peanut sauce with a touch of sweetness, drizzled over brown rice noodles topped with a perfect blend of vegetables–it is amazingly delish!

- Spicy Peanut Sauce:
- 3/8 cup salted peanuts
- 2 tbs sesame oil
- 2 garlic cloves
- 1/4 tsp ginger, ground
- 1 serrano pepper
- 1 medjool date, pitted
- 1/3 cup water
- 1 tbs apple cider vinegar
- Brown Rice Pasta w/ Veggie Confetti:
- 12 oz brown rice pasta
- 1/2 red onion, finely chopped
- 2 mini sweet bell peppers, finely chopped
- 1 garlic clove, minced
- 1 cup peas, steamed
- sesame seeds & dried cilantro for garnishing
In a food processor, blend peanuts & sesame oil until smooth.
Add remaining ingredients & process until evenly mixed.
Use right away or store in an airtight glass container in the fridge for up to 2 weeks.Brown Rice Pasta w/ Veggie Confetti:
Cook brown rice noodles until al dente. Drain & set aside.
Steam peas, set aside.
In a sauce pan over medium heat saute onion, garlic & peppers in a dash of sesame oil until all begins to brown.To serve:
Fill bowl(s) with pasta, sprinkle with veggie confetti, drizzle with
peanut sauce, garnish with sesame seeds & cilantro! Serve warm or cold.
