    When I threw this delightful bread together, I had a real craving for that classic Morning Glory muffin flavor. I decided on loaf form, and knew that I wanted it packed full of flavorful and healthy ingredients. I was very pleasantly surprised with how absolutely delicious it turned out.     Ingredients

    • 1 cup gluten free all purpose flour
    • 1/4 cup almond flour
    • 1/4 cup tapioca flour
    • 1/2 cup coconut sugar
    • 2 tsp baking soda
    • 2 tsp ground cinnamon
    • 1 1/2 tsp baking powder
    • 1/2 tsp ground ginger
    • 1/2 tsp sea salt
    • 1/4 tsp ground nutmeg
    • 1/2 cup plain greek yogurt
    • 1/4 cup coconut oil melted
    • 1/4 cup raw honey
    • 1 egg beaten
    • 2 tbs lemon juice
    • 2 tsp vanilla extract
    • 2 cups carrots grated
    • 1/2 cup coconut shredded
    • 1/2 cup golden raisins
    • 1/2 cup walnuts chopped
    • 1 apple grated
    • 1 tbs poppy seeds
    Prevent your screen from going dark

    Instructions

    • Preheat oven to 350°F.
    • Grease or line a loaf pan with parchment paper. Set aside.
    • In a large mixing bowl. Sift together ingredients all purpose flour through nutmeg.
    • In another large mixing bowl, combine yogurt, oil, honey, egg, lemon juice and vanilla. Whisk until smooth.
    • Pour your wet ingredients into your dry ingredients. Mix until evenly combined.
    • Gently fold in carrots, coconut, raisins, walnuts, apples and poppy seeds until evenly distributed.
    • Pour your bread batter into your prepared loaf pan.
    • Bake for 45-55 minutes, or until firm, turning golden and a toothpick inserted into center comes out clean.
    • Let cool before removing from loaf pan, slicing and serving.
    • Enjoy!

      Hello, I have everything except the yogurt. I’m trying to find dairy-free recipes in addition to gluten free. Is there anything I might have on hand that will be a substitute for yogurt? Coconut cream?

        Hi! If you do not have dairy-free yogurt, applesauce would be the next best thing. If you only have coconut cream, I would cut it down to 1/4 cup for the best results. I hope this helps!

      I have to say this sounds delicious but have not made it. Please help me with adjusting of your recipe.
      We can't have almond or all purpose flour so we hope to adjust this with sorghum/buckwheat mix.
      Can't tolerate too much sugar so will maple work instead of coconut sugar?
      We use vegan yogurt, will this work?
      Sorry to mangle your creation but it's our 7 year old and dad who cannot tolerate these ingredients.
      Looking forward to your suggestions.

        Hi, Jasmin! No worries. I completely understand. Sorghum and buckwheat make a wonderful mix and you can use 3/4 cup of each in this recipe. Maple syrup will work just fine, but you will want to cut the yogurt down to 1/4 cup when doing so. And yes, vegan works just fine! I hope this helps. 🙂

      Hi, does your gf flour already contain Xantham gum? If not how much do I need to add? As I make my own gf flour mix. Also is tapioca flour same as tapioca starch? I have tapioca starch. I am new to gf free baking and love the look and sound of your recipe. Going to make it today. Xxx

        Hi, there! This recipe works well with all purpose blends with or without xanthan. If you choose to add xanthan (which will result in a loaf that hold together a bit better), use 1/2 teaspoon. Tapioca flour and starch are the same!       My husband & I have been wanting to make a healthy Morning Glory loaf. . Glad to find your recipe. Mind you ,this was our 2nd try making it. Since the 1st one didn't quite turned out quite right! It's a lot of work since at the same time I was cooking brunch for the family & my hubby decided out of his heart to help me! Followed every step & ingredients you had except I didn't have Tapioca flour. Added orange zest & the juice from the orange. Instead of raisins, we added dried cherries & dates! We don't like baking soda as much, so I had used a tsp only! Oh, we added 1/2 c crushed pineapple. Hey, it came out very moist , and boy it is nutrient riched food!
