🍑 Ingredients and Substitutes

Peaches: Peaches are the star ingredient of this sorbet recipe. Using either frozen or fresh peaches provides a luscious and sweet fruit base for the sorbet. Frozen peaches work well because they add a nice frosty texture, while fresh peaches offer a vibrant and natural fruit flavor. If using fresh peaches, peel them first for the best results.

Sugar: Sugar is added to sweeten the sorbet and balance the natural tartness of the peaches. The amount used can be adjusted according to personal preference for sweetness. Granulated white cane sugar dissolves easily, ensuring a smooth consistency in this sorbet. Having said that, you can use a different sweetener if you prefer, just know it will change the color and texture of this peach sorbet slightly. Even a liquid sweetener like maple syrup, agave nectar, or honey can be used if you prefer.

Cold water: Cold water is added to help dissolve the sugar and create a simple syrup. It also helps to make the sorbet smoother and easier to scoop. Using cold over room temperature simply helps the sorbet set sooner rather than later.

Lemon juice: Lemon juice serves multiple purposes in this recipe. Firstly, it adds a subtle tang that enhances the flavor of the peaches. Secondly, lemon juice acts as a natural preservative, preventing the sorbet from browning and extending its shelf life. Additionally, the acidity of the lemon juice helps to prevent the formation of large ice crystals, resulting in a smoother texture. Freshly squeezed or bottled lemon juice can be used depending on availability and preference. If you do not have lemon juice, lime juice can be used instead and adds a fun flavor twist.

💭 Top Tips

  • Don’t skip the step of allowing the peach sorbet to rest at room temperature for 5 minutes before scooping. This creates the perfect consistency for enjoyment.
  • Once you get this recipe down pat, you can use this as a base for other fruit sorbets. Simply replace the peaches with another fruit of your choice. I like to use mango or blueberries.
