My spicy watermelon lime syrup is one of those recipes that tastes like something you’d find at a specialty cocktail bar, yet it’s surprisingly easy to make at home. Watermelon juice, fresh lime, Fresno peppers, and sugar simmer together into a vibrant, sweet-and-spicy syrup that’s perfect for mocktails, cocktails, sparkling water, desserts, pancakes, waffles, and more.

I love keeping a jar of this spicy watermelon lime syrup in the fridge during the summer. It’s sweet, tangy, a little spicy, and perfect for everything from sparkling water to ice cream.

A Note From Kristen

I made this for the first time when I had half a watermelon sitting on my counter and a bag of Fresno peppers I kept meaning to use. I blended the watermelon, threw everything in a pot, and let it go low and slow while I did other things. By the time I strained it and tasted it, I was immediately trying to figure out what else I could put it on. So tasty! I’ve since made it with store-bought juice, and it works just as beautifully. Keep a jar in the fridge and you’ll find a reason to use it every day. Enjoy!

  • Watermelon Juice: Store-bought works fine, but you can also blend fresh watermelon and strain it for the juice. If going fresh, make sure it’s fully strained so the syrup reduces cleanly.
  • Fresno Peppers: Fruity and mild to moderately hot, Fresnos are ideal here. Jalapeños work as a substitute but are slightly grassier in flavor.
  • Lime Zest: This is what gives the syrup its brightness. Zest your limes before juicing them and don’t skip it!

  • Keep the heat low and let it simmer slowly. Rushing it risks scorching the sugar.
  • Steep the peppers off heat for the full 10 minutes before straining for the best flavor.
  • This simple syrup will look thin when hot. Let it cool completely before deciding if it needs more time on the stove. It thickens as it cools!
  • Zest your limes before juicing (much easier that way!).

My spicy watermelon lime syrup combines fresh watermelon juice, Fresno peppers, and lime into a sweet, tart, and gently fiery syrup you'll want to put on everything. Simmer it down low and slow until thick and glossy, then use it in cocktails, mocktails, over ice cream, or anywhere you need a little sweet heat!

Ingredients

  • 4 cups watermelon juice store-bought or blended and strained fresh watermelon; see notes below
  • ½ cup granulated white sugar coconut sugar or brown sugar can be used but the color will be different
  • Zest of 2 limes
  • 4 tablespoons fresh lime juice
  • 2 fresh Fresno peppers thinly sliced
  • Pinch salt

Method

  1. Add the watermelon juice, sugar, lime zest, lime juice, peppers, and salt to a saucepan. Bring to a gentle simmer, over medium-low heat.

  2. Simmer for 30–40 minutes, stirring occasionally, until reduced by about half and noticeably syrupy.

  3. Remove from the heat and steep for 10 minutes. Strain. Cool completely (it will thicken as it cools).

  4. Store in the refrigerator for up to 10 days or enjoy right away!

Notes

If using store-bought watermelon juice, look for one with no added sugar or flavoring that is just straight juice,or just watermelon and lemon juice. If blending fresh, cut your watermelon into chunks, blend until smooth, then strain through a fine mesh strainer or cheesecloth to remove the pulp. Fresh-blended gives you a brighter color and slightly more vibrant flavor, but store-bought is a totally fine shortcut and the syrup will still taste great either way!
