My Lifelong Grilled Cheese Habit

Grilled cheese has been my comfort food staple since I became a vegetarian at eight years old, and apple cheddar sage is one of my all-time favorite flavor combinations. I’m a sucker for a good savory apple recipe, and once sage gets involved, I’m completely sold.

What actually ties the whole sandwich together, though, is a thin layer of Dijon mustard on the inside of the bread. It’s my secret ingredient here. It adds just enough tang to balance the sweetness of the apple and honey without announcing itself. Skip it and you’ll still have a good grilled cheese. Keep it and you’ll have this one.

A Few Notes On Key Ingredients

  • Apple: Use a firm, slightly tart red variety like Honeycrisp or Pink Lady, and leave the peel on. It holds its shape when sliced thin, and the red skin gives you those pretty overlapping edges once the sandwich is sliced open.
  • Sage: Fresh, not dried. A little goes a long way, so chop it finely and don’t overdo it. You want it as a background note, not the headline.
  • Dijon mustard: Don’t skip this. It’s the ingredient that makes this taste like more than the sum of its parts, even though it’s barely noticeable on its own.

Getting The Melt Right

  • Keep the heat at medium-low. Cheddar takes a few minutes to fully melt, and if the heat is too high, your bread will be dark brown before the inside catches up. Slow and steady gets you a fully melted center and evenly golden crust.
  • Sandwich the apple between two layers of cheese. Cheese on both sides of the apple slices helps everything stay put and melts the apple in slightly, rather than leaving it as a cold, separate layer.
  • Press gently, don’t flatten. An occasional light press helps the bread make full contact with the pan for even browning, but pressing hard will just push the filling out the sides.

  • Pair with a bowl of Tuscan white bean soup for dunking, it’s just as cozy and comes together in one pot.

Ingredients

  • 2 slices sturdy sandwich bread gluten-free if necessary
  • 1/2 small red apple such as Honeycrisp or Pink Lady
  • 3/4 cup shredded sharp cheddar cheese
  • 1 teaspoon fresh sage finely chopped
  • 2 tablespoons softened butter
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • 1/8 teaspoon ground black pepper

Method

  1. Thinly slice the apple, leaving the peel on.
  2. Butter one side of each bread slice, then spread Dijon on the unbuttered side.
  3. Top one slice with half the cheddar, then a single overlapping layer of apple slices.
  4. Sprinkle with sage and black pepper, then drizzle with honey.

  5. Add the remaining cheddar and close with the second slice, buttered-side out.
  6. Cook in a skillet over medium-low heat, 3–4 minutes per side, pressing gently, until deeply golden and the cheese is fully melted.

Notes

  • Leave the red peel on the apple for texture and color; peeling isn’t necessary.
  • Cook low and slow (medium-low) so the cheese fully melts before the bread over-browns.
  • The thin layer of Dijon is the not-so-secret trick, don’t skip it.
  • Storage: best eaten fresh! If needed, wrap tightly and refrigerate up to 2 days; reheat in a skillet over low heat to re-crisp (microwaving will make the bread soggy).
