    This little quinoa dish makes a very delightful & filling meal!

    Sweet and Spicy Quinoa Peanut Stir Fry (Gluten-Free, Vegan)

    A super flavorful, healthy, and delicious Sweet and Spicy Quinoa Peanut Stir Fry! Gluten-free, vegan and perfect for lunch or dinner.
     
     
    Ingredients
    • 2 cups quinoa, cooked
    • 1 tsp turmeric, ground
    • 1/4 tsp red chili flakes
    • 1/4 tsp ground ginger
    • 3 tbs peanuts, salted
    • 1 tbs apple cider vinegar
    • 1/2 tsp salt
    • 2 tsp coconut sugar
    • 1 tbs sriracha sauce
    • 1 tsp fresh cilantro, chopped + extra for garnishing
    • 2 tbs grapeseed oil
     
    Instructions
    In a saucepan over medium heat, heat grapeseed oil & then add in turmeric, red chili flakes, ginger, peanuts and vinegar. Cook for 2 minutes while continuously stirring.Toss quinoa, salt, sugar, and sriracha into your spice mixture.Cook on medium heat for 3-5 minutes, stirring every minute or so. Then mix in cilantro & cook for 1 minute longer.Remove from heat, garnish with cilantro, and serve.
