This easy, healthy and delicious Maple Walnut Goji Berry Granola makes for one satisfying gluten-free vegan breakfast, snack or refined sugar-free treat!
We are a big fan of homemade granola in this household! It is such an easy, healthy and tasty thing to throw together for a quick breakfast, snack or dessert; and it’s a great thing to grab to take on a hike or trip to the park.
Goji Berries
This particular granola is packed with antioxidant-rich goji berries (also know as wolfberries!) Goji berries are chock-full of nutritional benefits including being protein & fiber-rich, full of anti-inflammatory effects, blood sugar balancing, and mood boosting! Throw in some nutrient-dense and filling raw walnuts + wholesome flavors and you are in for one healthy treat!

Quinoa Cocoa Molasses Crunch Granola
Goji Berry Granola
Ingredients
- 2 1/2 cups rolled oats certified gluten-free if necessary
- 7 tablespoons maple syrup
- 3 tablespoons coconut oil
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 3/4 cup raw walnuts roughly chopped
- 1/2 cup goji berries also known as wolfberries
Instructions
- Preheat oven to 275°F. Line a cookie sheet with parchment paper. Set aside.
- Pour rolled oats into a large mixing bowl. Set aside.
- In a small saucepan over medium-low heat combine maple syrup, coconut oil, cinnamon and salt. Whisk until all is combined and warmed throughout (only 1-2 minutes).
- Pour your maple-oil mixture over oats. Stir vigorously until all is evenly coated.
- Spread your granola mixture onto your parchment paper lined cookie sheet in a single, even layer.
- Bake for 30 minutes.
- Remove from the oven and evenly sprinkle walnuts on top.
- Return to the oven and bake for 8 minutes longer.
- Remove from the oven and sprinkle the top with goji berries.
- Return to the oven and bake for 2 minutes longer.
- Remove from the oven and let cool completely before serving or storing.
- Enjoy!
Can I soften the goji berries first? Maybe soak them in liquid, then add them to the cooked granola? I find sometimes they are very chewy, I prefer them when they have been soaked.
You most definitely can! I personally usually enjoy this granola with oat milk, cereal-style and I find letting that sit for a few minutes, softens the goji berries as well.
Is there a way to make these into granola bars?
The quickest and easiest way to do that would be to mash 2-3 bananas and mix with about 2 cups of granola, then press the mixture into a square pan and bake at 350 for about 15 minutes. I hope this helps!
Not sure what I did wrong. Mine came out slightly burnt. Any idea why?
Hi Lauren! So sorry you had that experience. It certainly shouldn’t burn. I have a few questions—did you make any changes to the recipe at all? Did you add the walnuts and goji berries at the end of the cooking time as instructed? If you followed everything to a T, I can only guess that it is due to differences in ovens and oven temps, which does sometimes happen.
