After it popped up on my feed, I wanted to create my own version using some of my favorite plant-based pantry staples, and I’m so glad I did. It’s one of those no-fuss recipes that comes together easily and always hits the spot on busy nights. I hope you love it!

Ingredient Notes

A few quick notes on the ingredients that matter most. Find the full ingredient list and instructions in the recipe card below.

  • Full-Fat Coconut Milk: Makes our curry sauce thick and luscious. Light coconut milk can work as a substitute, but you’ll end up with a thinner, less velvety sauce. 
  • Thai Green Curry Paste: Gives our curry dumplings their signature color, herby flavor, and bite. You absolutely can swap in red curry paste if that’s what you have – the flavor profile will be different (but still delicious!).
  • Frozen Dumplings or Potstickers: The base of the dish. I like to use Feel Good Foods gluten-free vegan vegetable potstickers for this recipe, but you can use any variety you prefer. They’re so easy to keep on hand in the freezer, which makes this recipe extra convenient!

How to Make Coconut Curry Dumplings

Preheat the oven to 400°F. In a 9 x 13-inch baking dish, whisk together the coconut milk, green curry paste, soy sauce, maple syrup, ginger, garlic, and vegetable broth until smooth.

Add the greens and stir to combine.

Arrange the frozen dumplings in a single layer, pressing them into the sauce so the tops stay slightly exposed.

Bake uncovered for 30 to 35 minutes, until the sauce is bubbling and the dumplings are hot throughout.

For a crisp finish, broil for 2 to 3 minutes. Squeeze over lime juice and garnish with green onion, sesame seeds, and chili oil if desired, before serving. Enjoy!

Flavor Boost Tips

  • Don’t overcrowd the pan. Keep the dumplings in a single layer so the tops can lightly crisp while baking.
  • For more color and flavor, broil for the last few minutes until the tops turn lightly golden.
  • Finish with fresh lime juice right before serving. It brightens the sauce and balances the richness.
  • Add chili oil or chili crisp at the end if you want extra heat and texture.

Ingredients

  • 1 13.5-ounce can full-fat coconut milk
  • 3 tablespoons Thai green curry paste
  • 1 tablespoon soy sauce or coconut aminos
  • 1 teaspoon maple syrup
  • 1 teaspoon grated fresh ginger or 1/2 teaspoon ground ginger
  • 2 cloves garlic minced
  • 1/2 cup vegetable broth
  • 1 cup chopped greens of choice spinach, arugula, or baby bok choy are great choices
  • 1 10-12 ounces frozen dumplings or potstickers I like to use Feel Good Foods gluten-free vegan potstickers
  • juice of 1/2 lime or 1 tablespoon lime juice
  • green onion chopped, optional garnish
  • sesame seeds optional garnish
  • drizzle of chili oil optional garnish

  4. Bake uncovered for 30-35 minutes, until the sauce is bubbling and the dumplings are heated through. If you want a little crisp, broil for 2–3 minutes at the end.

Notes

Storage and Reheating 
Store leftovers in an airtight container, then store in the refrigerator for up to 3 days. Alternatively, you can make the sauce about 3 days ahead, store it in the fridge, and then combine it just before serving. I don’t recommend freezing the dumplings with the sauce since the texture of the dish might change once it’s thawed.
Reheat either on the stovetop or in the microwave. Add liquid like coconut milk, a splash of water, or broth to help loosen the sauce if it’s too thick.
