  • Oat Flour: The main dry ingredient of this oat flour mug cake that gives it structure and binds all the ingredients together without the gluten. 
    Use certified gluten-free oat flour if necessary.
  • Baking Powder: Acts as a leavening agent, helping this gluten-free mug cake rise and giving it a fluffy texture.

 Add the dry ingredients to a standard coffee mug and mix. Add the wet ingredients.

Expert Tips

  • The cook time is based on a standard 1000-watt microwave oven. If your microwave is more or less powerful, you may need to adjust the time accordingly, starting at 1 minute and working up in 10-second intervals. When done, it will look set/cooked on top but still be somewhat soft to the touch, as it will continue to set as it cools. It is better to undercook than overcook!
  • Ensure you use a wide, microwave-safe mug when making this gluten-free cake. You want your favorite spoon to easily fit! 
  • Don’t overmix the oat mug cake, as this can create a denser cake. 
  • Let this gluten-free chocolate chip mug cake rest for about 2 minutes post-cooking to help set the texture and allow the flavors to meld together.

  • 1/8 teaspoon salt
  • 1/4 cup tahini
  • 2 tablespoons maple syrup

  • 2 tablespoons chocolate chips of choice

Storage and Reheating
Mug cakes are best consumed fresh from the microwave. However, if you have leftovers, cover them and store them in the refrigerator. Then, consume them within 24 hours to enjoy the best flavors. 
To reheat, place your refrigerated oat flour mug cake in the microwave and heat for about 10-15 seconds. This restores softness without overcooking.
