A Note From Kristen

I tested this a few different ways, and thinner slices made the biggest difference. It keeps the salad crisp without being too sharp. I also played with the amount of feta, and it really helps mellow everything and tie the flavors together. I hope you love it as much as I do. Happy eating!

Ingredient Notes

A few quick notes on the ingredients that matter most. Find the full ingredient list and instructions in the recipe card below.

  • Radishes: Make sure they’re thinly and evenly sliced to achieve the best, crisp texture.
  • Feta Cheese: Goat cheese, vegetarian/rennet-free feta cheese, or vegan feta can be used as a substitute.
  • Lemon Juice: You can use lime juice or mild vinegar as a substitute if you’re out of lemon juice.
  • Red onion: Go for very thin slices to keep the flavor from overpowering. If you want it even milder, soak the slices in lemon juice or vinegar for 10 minutes first.

Crisp and Flavorful Hacks

  • Use a mandoline or sharp knife to create paper-thin radish slices.
  • If you want mellower red onions, soak the slices in lemon juice or vinegar for about 10 minutes first before using them.
  • Tear the cilantro leaves instead of chopping them to avoid overpowering the salad.
  • Only mix the crisp veggies with the dressing right before serving to maintain freshness and crunch.
