Gluten Free Strawberry Oatmeal Muffins
- 1 cup gluten free rolled oats
- 1 cup oat flour see notes for how to make if preferred
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1 cup strawberry Greek yogurt or dairy-free strawberry yogurt
- 1 egg beaten
- 1 tsp vanilla extract
- 1/4 cup coconut oil melted
- Preheat oven to 350°F. Grease muffin tin or liners, set aside.
- In a large mixing bowl, combine dry ingredients.
- In another bowl, beat wet ingredients together.
- Mix your wet & dry ingredients together until just combined.
- Pour your muffin batter into your greased tin or liners.
