Jerk itself is originally a term used to describe a method for seasoning and grilling meat, with its origins in Jamaica. Jerk sauce is a marinade usually made from fresh scotch bonnet peppers, ginger root, green onions, garlic, lime juice, soy sauce, and Caribbean spices like allspice, cinnamon, and thyme.
