A Note From Kristen

I’ve been drinking a lot of iced matcha this summer and found myself craving something lighter than my usual latte. Watermelon juice and coconut water turned out to be the perfect combination, adding just enough natural sweetness that I didn’t need to sweeten the matcha at all. The result is a refreshing layered drink that’s become one of my favorite ways to cool off on hot days. I hope you love it too!

Key Ingredient Notes

A few quick notes on the ingredients that matter most. Find the full ingredient list and instructions in the recipe card below.

  • Watermelon Juice: Fresh watermelon juice made with a juicer or blender works best. Cold-pressed store-bought watermelon juice is a great option, too. If buying bottled watermelon juice, choose an unsweetened variety with minimal ingredients for the freshest flavor.
  • Matcha Powder: When possible, a good ceremonial or culinary-grade matcha whisks up smoother and tastes less bitter than lower-quality powders.

What to Serve Alongside Watermelon Matcha

  • Pair with a light breakfast like avocado toast or overnight oats.
  • Serve alongside a fruit salad or a bowl of fresh berries for a summer brunch.
  • Enjoy as an afternoon pick-me-up instead of a second coffee!
  • Add a few mint leaves or a lime wedge on the rim for extra freshness.

Kristen’s Top Tips

  • Chill the watermelon juice and coconut water ahead of time so the ice doesn’t melt too fast.
  • Whisk the matcha in a zigzag motion for the frothiest texture, a small whisk or matcha frother works best.
  • Pour slowly. Rushing the matcha layer is the most common way to lose the layered look.
  • Give it a stir right before drinking if you want the flavors fully combined.

My Favorite Variations

Swap the watermelon juice for pineapple or cucumber juice for a different flavor base. For a creamier version, use coconut milk instead of coconut water. A squeeze of lime in the watermelon layer adds a nice tart edge!

Notes

Storage
This drink is best enjoyed fresh since the layers won’t hold once stirred. If you need to prep ahead, store the watermelon-coconut base and the matcha separately in the fridge for up to a day, then layer them together right before serving.
