A Note From Kristen

Delicious flavor and a smooth, sippable texture in one drink? You betcha. This beet pineapple juice is a refreshing change from the usual fruit juices, with just the right balance of earthy and sweet. I often make it when I have extra beets on hand. The ginger really brings it all together, adding warmth and helping round out the overall flavor. It’s bright, invigorating, and easy to keep coming back to. Happy sipping!

Ingredient Notes

A few quick notes on the ingredients that matter most. Find the full ingredient list and instructions in the recipe card below.

  • Fresh Ginger Root: Can be swapped with a pinch of ground ginger. It doesn’t add as much spice as you would expect, but rather helps round out the flavors. It’s my secret ingredient!
  • Lemon: Lime actually makes a tasty alternative in place of lemon if needed.

How to Make Beet Pineapple Juice

01

Run the beets, pineapple, lemon, and ginger through a juicer.

A metal bowl containing lemon wedges, frozen pineapple chunks, and dark red beet slices—perfect ingredients for a refreshing beet pineapple juice—rests on a dark surface.

02

Give the juice a quick stir, then serve immediately. Enjoy!

Don’t Have a Juicer? Do This Instead

A blender works just as well in this recipe, but with one extra step! So, add all ingredients to a blender with ¼ to 1 cup of water, as needed to keep things moving, but not so much that the flavors get diluted. After blending, strain the mixture through a fine-mesh sieve or cheesecloth into a glass. This extra step removes all the pulp, giving you a smoother, cleaner juice!

Juicing Like A Pro

  • If using fresh pineapple, make sure it’s nice and ripe. It’s the best way to naturally sweeten and balance the strong flavor of the beets without added sweeteners.
  • It’s important to peel the lemons more than anything else, as the peel can introduce an unwanted bitter flavor.
  • Cut everything into smaller pieces so your blender or juicer process them better.
  • Using cold ingredients (and water, if using a blender) gives you a naturally cold drink, even without ice.

Method

  1. Feed your juicer the beets, pineapple, lemon and ginger.
  2. Once finished, stir the juice and serve right away. Enjoy!

Notes

No juicer? This works in a blender, too. Add the beets, pineapple, lemon, and ginger to a high-speed blender with 1/4 to 1 cup cold water. The amount of water needed will depend on how powerful your blender is. Blend until completely smooth. Strain through a nut milk bag, cheesecloth, or fine mesh strainer, pressing well to extract as much liquid as possible.
Storage
This beet juice is best enjoyed freshly made! However, in case you’ve got leftovers, transfer them to a tightly sealed glass jar or an airtight container and place them in the fridge immediately. For the best taste and freshness, consume within 24-48 hours.
