We’re a vegetarian family of four, and Indian food is our favorite takeout. Whatever else we get, we always order at least one paneer-heavy dish! Paneer is such a unique cheese, with a hearty texture that holds its shape instead of melting into everything around it.
Our air fryer gets used daily, mostly for my crispy air fryer tofu, so I wondered if paneer would work the same way. The first batch surprised me. My youngest son ate almost the whole thing right away, so I kept testing spice combinations until I found the one I liked best. This is it. It’s just as good as a snack as it is on grain bowls or stirred into stir fries and curries.

What is Paneer?
Paneer is a fresh cheese common in South Asian cooking, where it shows up in dishes like palak paneer and paneer tikka. It’s made by heating milk, curdling it with an acid like lemon juice or vinegar, and pressing the curds into a firm block. Because it’s set with acid instead of animal-derived rennet, it’s vegetarian and it holds its shape under high heat rather than melting.
The flavor is mild and milky, so it takes on whatever spices you pair it with. If you’ve cooked with halloumi, paneer behaves similarly in the air fryer but is softer and much less salty. How to Keep It Golden Outside and Soft Inside
- Check at 7 minutes the first time you make it. Air fryers run differently, and paneer goes from golden to chewy quickly once it’s overcooked.
- Keep the cubes in a single layer with a little space between them. Crowded paneer steams instead of browning, so cook in batches if you double the recipe.
- Don’t skip turning halfway. The side touching the basket browns differently than the top, and flipping gets you color all the way around.
- Serve it right away. Paneer firms up as it cools, so it’s at its best straight from the basket.
- Store leftovers in an airtight container in the fridge, then reheat in the air fryer for a couple of minutes until warmed through.

How We Eat It
- Eat it straight from the basket as a snack, with lemon wedges for squeezing.
- Stir it into a curry right before serving, like my zucchini curry or creamy eggplant curry.
- Pile it over a bowl of my sweet and spicy pineapple rice for a quick dinner.
- Toss it into a veggie stir fry at the very end so it stays tender.
- Serve it over garlic fried rice with a dollop of yogurt for an easy lunch.

Making It with Frozen Paneer
Frozen paneer works here, but thaw it fully in the fridge first, ideally overnight. Cooking it straight from frozen means the oil and spices won’t stick to the icy surface, and the outside can brown before the center warms through.
Once it’s thawed, pat the block dry, since frozen paneer tends to release more moisture than fresh. If you can, cut it into 1-inch cubes after thawing rather than before freezing. Thawed paneer can be a little more crumbly, so a sharp knife and a gentle toss with the seasonings help keep the cubes intact.
