Tomatoes: The star ingredient. They bring juiciness, sweetness, and a rich umami flavor to the dish. Any fresh, ripe, vibrant tomatoes will work. Roma tomatoes are a personal fave!

How to Roast Tomatoes in an Air Fryer

Mix melted butter or olive oil with smoked paprika, garlic powder, salt, and pepper.

Expert Tips

  • Don’t overcrowd the tomatoes on the air fryer tray. Leave some space between each piece to allow the air to circulate in the air fryer and ensure that they’ll roast, not steam. 
  • Larger tomatoes like Globe or Roma tomatoes work well for this recipe, but you can also use smaller ones, like cherry or grape tomatoes, if you prefer (just reduce the cooking time by half!).

Ingredients

  • 2 medium tomatoes Roma works well
  • 1 tablespoon melted butter or olive oil for a vegan version
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme

Instructions

  • Cut the tomatoes into thick slices (about ½-inch) or halve them if small. Pat them dry with a paper towel.
  • In a small bowl, mix the melted butter (or olive oil) with smoked paprika, garlic powder, salt, and pepper. Brush or drizzle this mixture over the tomato slices.
