My banana bread chia pudding lets you enjoy all the tasty flavors of banana bread without turning on the oven or pulling out a blender! The thick, scoopable chia pudding base is made with ripe banana, maple syrup, and cinnamon, then topped with a sweet oat crumble that adds just the right amount of texture.

If you’re looking for an easy way to work more chia seeds into your routine, this recipe has been on repeat in my kitchen lately. It truly does taste like banana bread, with ripe banana, cinnamon, maple syrup, and a crunchy oat crumble on top. A few quick notes on the ingredients that matter most. Find the full ingredient list and instructions in the recipe card below.

  • Chia Seeds: The key ingredient to achieving a thick banana chia pudding. However, if you want a smoother blend, you can try using ground chia instead. I like to use black chia seeds, but white can be used instead if you prefer.
  • Milk of Choice: Makes the pudding very creamy. I like to use oat milk for this, but you can use dairy milk, non-dairy milk, or plant-based milk like almond milk or soy milk. 
  • Rolled Oats: Helps make the delicious crunchy topping! Use certified gluten-free oats if necessary. Quick oats can be used in a pinch!

How to Make Banana Chia Seed Pudding

Mash the banana in a small bowl until mostly smooth, leaving a few small chunks. Stir in the milk, maple syrup, vanilla, cinnamon, and salt until combined.

Add the chia seeds and stir well for about 30 seconds to help prevent clumping.

Let the mixture sit for 5 minutes, then stir again to evenly distribute the chia seeds.

Pour into a jar, leaving a little room at the top. Cover and refrigerate overnight, or until thick and scoopable.

For the crumble, combine the oats, maple syrup, melted butter or oil, cinnamon, and salt in a small skillet over medium heat. Cook for about 5 minutes, stirring often, until lightly golden and fragrant. Let cool.

When ready to serve, spoon the crumble over the top of the chia pudding.

  • 1/2 cup mashed ripe banana about 1 banana
  • 1 cup milk of choice I like to use oat milk
  • 2 teaspoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch salt
  • 4 tablespoons chia seeds
Banana Bread Crumble
  • 1/4 cup rolled oats use gluten-free certified if necessary
  • 2 teaspoons maple syrup
  • 2 teaspoons coconut oil
  • Pinch cinnamon
  • Pinch salt
Topping
  • 5 to 6 banana slices
  • Drizzle of maple syrup

Method

  6. Cover and refrigerate overnight, or until thickened and scoopable.

  8. When ready to serve, add a layer of crumble on top of the chia pudding.
