A Note From Kristen

I’ve always believed salads deserve a place on every holiday table, and this dressing makes the case beautifully! Its fruity flavor and thick, creamy texture elevate even simple greens, and its vibrant color is a real stunner among all the festive dishes. I keep a jar in the refrigerator throughout the season so I can add a fresh, bright boost to any meal. It has become my favorite way to bring instant lift to whatever I’m serving. Enjoy!

Ingredient Notes

  • Pomegranate Molasses: The star of this delicious dressing, giving it its signature sweet-tart flavor that makes it unique.
  • Dijon Mustard: Acts as a natural emulsifier, helping the oil and other liquids in the dressing blend smoothly without separating.
  • Plain Greek Yogurt: Adds a creamy, velvety texture to the pomegranate salad dressing without making it heavy. You can also use plant-based or dairy-free yogurt as a substitute.
  • Maple Syrup: Provides a slight sweetness that rounds out the tartness of both the pomegranate molasses and yogurt. You can use honey if you’re not vegan.
  • Salt: Enhances the natural flavors of the other ingredients.
  • Ground Black Pepper: Introduces a subtle kick that keeps the dressing’s flavor interesting.
  • Extra Virgin Olive Oil: Gives the dressing its rich, silky mouthfeel while adding a slightly fruity undertone. You can also use a neutral oil like avocado oil if you prefer a milder flavor.

Kristen’s Top Tips

  • Don’t rush adding the oil! Pouring it slowly while whisking helps the dressing properly emulsify and stay blended.
  • If the consistency is too thick, add a small splash of water to help thin it out.
  • Shake well before using.
  • Flavor variations you can try include adding:
    • Orange or lemon juice
    • Minced garlic or roasted garlic paste
    • Fresh herbs like mint, basil, or parsley
    • A pinch of cayenne pepper, chili flakes, or hot sauce
    • Tahini or freshly grated ginger.

Notes

Storage
Don’t leave any unused dressing at room temperature for too long! Keep any leftovers in a glass jar, mason jar, or any airtight container with a tight-fitting lid and store it in the refrigerator on the middle shelf for up to 5 days.
Since it contains yogurt, it’s best to consume it immediately. Discard immediately if you notice any off smell, unusual separation, or cloudiness. I don’t recommend freezing the dressing since it may separate and curdle once thawed.
