Ingredient Notes

Maple syrup: Maple syrup adds a small amount of additional sweetness, but feel free to omit it if you prefer. Alternatively, you can use agave syrup, vegan honey, or honey if not vegan.

Vanilla extract: A subtle hint of vanilla enhances the chocolate and peanut butter flavors. If you do not have any on hand, it is okay to do without if need be.

Salt: A pinch of salt brings out all of the flavor notes.

How to Make Quinoa Crunch Bites

  1. Combine all of the ingredients, except the quinoa puffs, in a large mixing bowl. Mix until smooth.
  2. Gently fold in the quinoa puffs.
  3. Using your hands, roll the batter into twelve golf ball-sized rounds.
  4. Store or enjoy right away!

Ingredients

  • ½ cup peanut butter creamy
  • ¼ cup Earth Echo Cacao Bliss
  • 3 tablespoons maple syrup
  • ½ teaspoon vanilla extract
  • teaspoon salt
  • cup quinoa puffs

Method

  1. In a large mixing bowl, combine the peanut butter, Earth Echo Cacao Bliss, maple syrup, vanilla extract, and salt.
  2. Mix until smoothly combined.
  3. Add the quinoa puffs and then gently fold them in.
  4. Using your hands, grab golf ball-sized portions of the batter and then roll into balls using the palms of your hands.
  5. Enjoy right away or keep stored in an airtight container in the refrigerator for up to 10 days.

    These Quinoa crunch bites are delicious! I have made them with peanut butter & almond butter they are both very tasty.

    1. Hi! When you toast dry quinoa in a hot skillet, it will pop (much like popcorn), resulting in a puffier, lighter, crunchier quinoa that is reminiscent of puffed rice. I hope this helps!
