Roasting and flavoring them with a glaze made from Dijon mustard, olive oil, and honey creates a perfect balance of savory, sweet, and zesty flavors, all in one dish. It’s one of the best ways to enjoy beets!

Golden Beets: The main star of the dish. They have a mildly sweet, earthy flavor that works well with the glaze. 

  • If you don’t have golden beets, yellow beets are great substitutes. While you can use red beets, note that the dish’s flavor profile might change slightly since they have a more robust flavor.  

Olive Oil: Helps the beets roast evenly in the oven. 

Honey: Adds a natural sweetness that balances the earthiness of the beets and the tanginess of both Dijon mustard and apple cider vinegar. 

Dijon mustard: Imparts a tangy kick that makes the sauce delightful.

How to Roast Golden Beets

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper. Set it aside.
  2. In a small bowl, whisk together the oil, honey, mustard, vinegar, garlic powder, salt, and pepper until well combined.
  3. In a large bowl, toss the peeled and chopped beets with half of the honey-Dijon mixture, ensuring they are evenly coated.
  4. Spread the beets in a single layer on the prepared baking sheet.
  5. Roast the beets for about 45 minutes, stirring halfway through, until they are fork-tender and slightly caramelized.
  6. Once roasted, transfer the beets to a bowl and toss with the remaining honey-Dijon mixture while still warm. Serve and enjoy!

  • Use maple syrup or any vegan-friendly sweetener instead of honey to make this dish vegan. 
  • Cutting the beets into uniform slices will help them cook and caramelize properly. 
  • Adding vegetables like carrots, broccoli, turnips, or sweet potatoes can add texture and more flavor.

  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper, then set aside.
  • In a small bowl, combine the oil, honey, mustard, vinegar, garlic powder, salt, and pepper. Mix well.
