  1. Heat the oven to 425℉. Line a large baking sheet or tray with parchment paper or aluminum foil and set it aside.
  2. In a large mixing bowl, combine the sweet potato slices with oil, salt, paprika, honey, and garlic powder, tossing until well coated.
  3. Arrange the slices in a single layer on the baking sheet.

Ingredients

  • 2 sweet potatoes peeled, sliced into ½” rounds
  • 3 tablespoons oil of choice I like to use avocado oil
  • 1 teaspoons salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon honey use maple syrup if vegan
  • ½ teaspoon garlic powder

Instructions

  • Preheat the oven to 425℉. Line a large baking sheet with parchment paper and set aside.
  • In a large mixing bowl, combine the sweet potato slices, oil, salt, paprika, honey, and garlic powder. Toss all to coat well.
  • Arrange the slices in a single layer on the prepared baking sheet.
  • Drizzle any remaining mixture left in the bowl over the sweet potato slices.
  • Bake for 15 minutes, flip, then bake for 15 minutes longer, or until fork-tender and caramelized around the edges.
