Inspired by the flavor of a warm chocolate chip cookie, but made with feel-good ingredients like oats and maple syrup. But the real secret? A generous sprinkle of coarse unrefined sea salt that ties it all together. That salty finish takes each bite to the next level, balancing the sweetness and making those little chocolate chips pop.   • Gluten-Free Rolled Oats: The hearty base of this granola recipe! Rolled works best to ensure the proper texture. Ensure they’re certified gluten-free if needed.​
  • Oat Flour: Adds a subtle nuttiness and helps bind the granola clusters together. You can make your own by blending rolled oats until a fine powder forms if you prefer.
  • Coconut Sugar: Provides a rich, caramel-like sweetness that complements the chocolate and enhances the overall depth of flavor.​ Any granulated sweetener will do, but coconut sugar provides the best flavor in my opinion.
  • Baking Soda: A small amount helps achieve a light crispness in the granola clusters.​
  • Ground Cinnamon: Adds a warm, spiced note that pairs beautifully with the chocolate and coconut sugar.​
  • Melted Coconut Oil: Lends a subtle coconut flavor and helps crisp up the granola as it bakes.​
  • Maple Syrup: Naturally sweetens the granola while adding moisture and a hint of maple flavor.​ If you are not vegan, honey makes a great alternative if needed.
  • Mini Chocolate Chips: Mini works best in this particular recipe – I do not recommend using regular-sized chips. Opt for dairy-free chips if keeping it vegan.​

How to Make Salted Cookie Granola

Preheat the oven to 325°F and line a baking sheet with parchment.
In a large bowl, mix the oats, oat flour, coconut sugar, baking soda, and cinnamon. Stir in the melted coconut oil and maple syrup until well combined and clumpy.

Let cool slightly, then fold in the chocolate chips.

Press the mixture firmly onto the baking sheet.

Sprinkle with Colima Sea Salt and then bake for 20 minutes, until golden around the edges—don’t stir!

Cool completely, then break into clusters and enjoy!

Storage

This granola will keep in an airtight container at room temperature for up to 10 days. For longer storage, freeze it for up to 3 months — just let it come to room temperature before serving!

Ingredients

  • 1 ½ cups rolled oats use certified gluten-free if necessary

  • ¼ tsp baking soda
  • ¼ tsp ground cinnamon

Instructions

  • Sprinkle the coarse unrefined sea salt evenly over the top.
  • Bake for 20 minutes or until golden brown around the edges, without stirring.
  • Let the granola cool completely on the baking sheet before breaking into clusters and storing in an airtight container.
