Ingredient Notes

Mayonnaise: Acts as the base and provides the creamy texture of the recipe. Use store-bought or homemade mayo if preferred. If vegan, use a plant-based mayo (Follow Your Heart Vegenaise is a personal fave!).

White Miso Paste: The star ingredient! It adds a distinct umami taste that makes this mayo distinct from other sauces. 

Rice Vinegar: Adds a bright, tangy taste to the miso mayonnaise. If you do not have rice vinegar, apple cider vinegar makes a great alternative.

Toasted Sesame Oil: Enhances the flavor and aroma of the sauce. Be certain to use the toasted variety of sesame oil rather than plain sesame oil for best results.

Maple Syrup: Imparts a little sweetness to balance miso’s salty, tangy taste. If not vegan, honey can be used for a slightly different flavor twist.

Garlic: Gives additional flavor to the sauce blend. If you do not have fresh garlic, use a pinch of garlic powder instead.

How to Make Miso Mayo

  1. Combine mayonnaise, miso paste, rice vinegar, sesame oil, maple syrup, and garlic in a small bowl, whisking until the mixture is smooth and cohesive.

How to Use Umami-Rich Miso Mayo

Storage

Transfer unused miso mayo into a clean, airtight container before keeping it in the refrigerator. If stored properly, it can last for a week. Discard the mayo immediately if it develops an off-color, taste, or smell.

Top Tips

  • We’re using white miso paste for its mild, slightly sweet flavor, but if you want something bolder or saltier, go with red miso. 
  • Adjust the taste if needed. Add more miso if you want it saltier, add more maple syrup if you want it sweeter, or add more vinegar if you want it tangier. 
  • If the miso tastes too salty, balance it with sweetness. You can use honey, agave syrup, or granulated sugar as substitutes for maple syrup. 
  • To avoid clumps, whisk the mayo and miso first before adding the rest of the ingredients and then mixing them together. 
  • If the sauce is too thick, you can thin it out with a few drops of lemon juice, rice vinegar, or even water. 
  • If you want your miso mayo to have extra depth of flavor, consider adding a bit of soy sauce, coconut aminos, or even nutritional yeast.  
  • You can also let the miso mayonnaise sit in the refrigerator for at least an hour before using it. This will give it time to allow its flavors to meld together.

Ingredients

  • 2/3 cup mayonnaise use vegan mayo if preferred (store-bought or homemade)
  • 1 tablespoon + 1 teaspoon white miso paste
  • 1 teaspoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon maple syrup
  • 1 clove garlic finely grated
