To make slow cooker roast potatoes, you will need a slow cooker like a Crock-Pot, or an electric pressure cooker with a slow cooking function.

🧂 Ingredients and Substitutes

Russet potatoes: I think Russet potatoes are the ultimate slow-cooking potato, but you can replace them with red potatoes, gold potatoes, fingerling potatoes, or any potato you prefer with similar results

Spices: I really love the combo of paprika, garlic, and oregano, but if you aren’t a fan, feel free to omit or replace any of them.

Oil: Olive oil and avocado oil taste best with these potatoes, but feel free to use what you have on hand.

Ingredients

  • 5 russet potatoes cubed
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground oregano
  • 1 teaspoon salt

Instructions

  • Place the potatoes, oil, garlic powder, paprika, oregano and salt into the slow cooker. Toss to coat.
  • Slow cook on low for 4 hours or on high for 2 hours, or until the potatoes are tender and golden.
  • Enjoy!

Notes

As served in the photos: I like to sprinkle some parmesan cheese and everything seasoning on the potatoes a few minutes before serving.
Cook time: My slow cooker takes 2 hours on high and 4 on low, but depending on the slow cooker used and how thickly the potatoes are cut it could take as long as 3 on high or 5 on low.
The skin: I prefer to keep the skin on, but if you aren’t a fan, feel free to peel the potatoes instead.
