    There’s no arguing that everyone loves a good taco night! This delicious Mexican dish has grown in popularity all over the world and it’s no wonder why. Tacos are versatile dishes that are full of healthy ingredients and have a rich savory flavor with just the right crunch. They can be served for breakfast, lunch, dinner, and can also be served as an appetizer or snack.

    Tacos are served with either soft or hard tortillas and filled with your choice of ingredients and toppings. The tortillas are usually filled with tomatoes, peppers, lettuce, onions, cilantro, sour cream, guacamole, salsa, and cheese. While tacos are traditionally composed of a choice of meat like chicken or beef, they can definitely be made a vegetarian-friendly dish (packed with vegetables!) and can be easily modified to fit into anyone’s diet.

    Ingredients

    • 2 tomatillos husks removed
    • 1 poblano pepper halved & stem removed
    • 1 jalapeno pepper halved & stem removed
    • 1 white or yellow onion halved
    • 2 tablespoons apple cider vinegar
    • 1 teaspoon garlic powder
    • sea salt or pink salt to taste
    Prevent your screen from going dark

    Instructions

    • In a high speed blender or food processor, combine all of the above ingredients.
    • Blend until smooth.
    • Salt to taste.
    • Enjoy!
