35 High Protein Vegan Meal Prep Recipes
Ingredients
- 1/2 cup coconut flour
- 1/4 cup flaked coconut
- 2 tbs maple syrup omit or substitute for keto option
- 2 tbs coconut oil
- 1 tsp vanilla extract
- 1/2 cup sunflower seeds
- 1/2 tsp sea salt omit if using salted sunflower seeds
- 1/2 tsp nutmeg
- 1 tbs chia seeds soaked in 2 tbs water
- 2 tbs shredded coconut for rolling
Instructions
- Blend all ingredients in a food processor or blender until a smooth dough forms.
- Shape into balls.
- Roll in shredded coconut.
- Store in freezer until ready to eat.
- Enjoy!
